The difference between havo and vwo is mainly in the length of the course and the depth of content. Havo takes five years and prepares you for higher vocational education (hbo), while vwo takes six years and prepares you for university. At vwo, you get more theoretical and academic depth, while havo focuses on a more practical application of the subject matter. If you choose the gymnasium, you will take Latin and Greek in addition to the regular vwo subjects. In addition, you will learn a lot about the culture and history of classical antiquity.
